So it is finally official, my in-laws own a new restaurant. Well, actually they have been the owners for over a week, but I have been a little too preoccupied to post about it. The Gifford's are the proud owners of Rosa's Mexican Grill. Yes, the original Rosa's on Mesa Drive and University. If you get a craving for fabulous Mexican food, Rosa's is the place to go! Congrats to Karma and Jim! All of your hard work is paying off.

WHATTTTTT??????? YOU ARE KIDDING ME!! I am dying! Do you know that we have not had good mexican food for like 7 years?? (I am not kidding.) I dream of Rosa's, the beans the chimichangas.. My mouth is watering. That is so amazing your in-laws own it. You are one lucky lady. Eat a BIG plate of beans and also a chimi for me, your mexican food deprived east coast livin cousin. In fact, Matt and I always say Rosas would do so well out here. SOOOO if they are interested in opening one in Bethlehem... just let me know! (I know its a real long shot, but it's worth a try!:))
Josh loves Rosas! I hope your inlaws know what there getting themselves into. Restaurants are so hard to run, but i wish them all the good luck. Next time were down we are going to have to go eat there with you guys.
How are you feeling? So are you going to call your baby Nathan or Blaine? He is so cute!
We are going to call him Nathan or Nate. Mike said I needed to change the name of my blog to add Nate and this was all we could come up with.
